Eggplant moussaka in the crock pot – Recipe test drive

I’m sure you’ve all been there, so follow along with me….

You plan a crock pot meal because you know you’ll be having a busy day, and it’s so easy just to pop dinner into the slow cooker in the morning, right? So you find a recipe that looks good, get the ingredients ready for the next day, wake up and dump that food into the crock pot … or so you thought.

Had you read the directions closely, you would have realized you picked one of those annoying recipes that asks you to use a skillet and brown the meat beforehand, yada yada yada. What a pain!

But I set aside my annoyance and followed the directions when making eggplant moussaka for the crock last week, even though it totally screwed up my whole morning, and boy, was I glad I did.

Throughout the day, the aroma of the dish cooking was telling me we were in for something special. There is just something about cinnamon and eggplant together that gets the salivary glands cranking, mine anyway.

I used ground turkey in this recipe because that’s what I had, but I think next time I would combine half ground turkey and half ground lamb, for a more authentic flavor, but still lower in fat and calories.

In retrospect, this recipe really wasn’t difficult or time-consuming, and I’d do it again in a heartbeat — it was so delicious! I know, I dirtied an extra dish, but I’m over it.

Eggplant is not my thing and I don’t own a crockpot – I don’t know – it’s always seemed like the culinary equivalent of cheating on a test ;-)… so this particular recipe is probably not for me, but…..

I had to laugh about starting to cook and then realizing you needed to do something in advance first. For me, it’s usually roasting garlic (which pretty much makes me have to choose an entirely different recipe) or toasting nuts (which throws me off just enough to be pissed!).

I also commiserate with how you felt about having to dirty an extra dish. For me, it doesn’t matter how simple the recipe is, I somehow, someway still end having 75 dishes in my sink at the end of the meal!
