Celebration dessert – A well deserved sweet treat.

I had a good week last week and I decided to reward myself for my good fortune. I went all week without getting into a fight at work, or at home with the wife. Bo only bit me once, so it was a good week. My reward, I decided, would be my World famous Peach upside down cake.

Now the best way to make this cake is with fresh peaches. It is awfully hard to get fresh peaches in April so I used some that I canned last fall. Canned peaches are as good as fresh if you can them right, using good techniques for canning your own peaches.

Peach Upside down Cake

Ingredients:

  • 2 1/4 cups self rising flour
  • 1 1/2 cups sugar
  • 1/2 cup shortening
  • 1 cup milk
  • 1 1/2 tsp vanilla
  • 3 eggs
  • 2 pints canned peaches

I prefer to make my cake from scratch and this recipe is one that always works good for me. If you do not want to take the time to make the cake from scratch, then your favorite yellow cake mix will work just as well.

Start by pre-heating the oven to 350 degrees. and greasing a 13 X 9 cake pan. Drain the syrup from the peaches.

Now sift the flour and sugar into a large bowl.  Add the shortening, milk, and vanilla. Beat for two minutes with medium speed on the mixer. Add in the eggs and beat for another two minutes.

Evenly spread the peaches on the bottom of the greased cake pan. Slowly pour the cake mix over the peaches and make sure they are covered evenly.

Place the cake in the pre-heated oven and bake for 30 to 35 minutes, or until a toothpick comes out clean.  Let the cake cool for a few minutes and it is ready. I do not normally frost this cake, however it is pretty good with a coconut pecan frosting as well.

Yummy. So on a bad week how many times does Bo bite you? Keep up the good recipes, and the added humor makes my week. I’ll try your peach upside down cake, and let you know what i think of it.
