Zucchini bites, edamame succotash and green beans with poppy seed sauce – Recipe Roundup

Each week, fabulous recipes grace Debbie’s in-box and pop up on her computer screen, and she’s sharing her favorites with you.

I’m just not sure what theme I ended up with this week, though perhaps “yummy recipes” is good enough. They are mostly side dishes — rice and veggies — with the exception of a succotash recipe that even a four-year-old could love.

In the interest of always trying to sneak in more veggies in a fun food, these zucchini bites caught my eye. They are basically very eggy cheese biscuits, almost like a quiche with the crust mixed in. I know my kiddo will love these, and they look easy enough to make.

Yeah… cheese. These mini provolone popovers remind me of the savory spinach and feta muffins I made a while back. I love the idea of making them in mini muffin pans, and I just happen to have some new ones, so I’ll be trying these very soon.

What do you think of a pineapple rice recipe? First off, it makes me think of Psych, but then I wonder. Heidi Swanson rarely, if ever, hits a stinker, so it probably is divine. I think I’d serve it with some Asian grilled salmon.

Edamame succotash with shrimp is so easy to prepare and my kid loves edamame, corn and shrimp… this just might be his dream dish if it were a finger food.

Green beans with poppy seed dressing add just the right amount of oomph to a side dish. We love green beans with mustard, and this recipe adds the nuttiness of the toasted poppy seeds. Sounds like a winner to me.

The local Asian buffet has the yummiest mussels in black bean sauce, which I’d never attempt to make at home, but broccoli in black bean and garlic sauce? That sounds easy enough.
