Use some pistachios in your cooking today

 

pistachiocakeIt’s easy to celebrate most food holidays. For National Chocolate Day you can just throw a Hershey’s Kiss in your mouth and say you celebrated the day. For National Milk Day you can just have a glass of milk and feel like you’ve accomplished something. But how about doing something a little extra to celebrate a food day.

Today is National Pistachio Day, and I have a challenge for you. Instead of just getting a bag of pistachio nuts from the store and eating them, how about using pistachios in your cooking instead? How about Couscous Stuffing with Currant, Apricots, and Pistachios? Perhaps a Pistachio Cake? Or maybe some Pistachio Muffins (it’s past breakfast time but muffins are good any time of day). Or how about Pistachio Pudding? Cooks.com has over 100 recipes for various pistachio pudding desserts. Who knew there were so many recipes for that?

I like saying the word. “Pistachio.” Pistachio, pistachio, pistachio, pistachio. Say it and type it a lot and suddenly it doesn’t even seem like a real word anymore.

Update: OK, several sources say that today is National Pistachio Day and some say it was last month. Which I should have realized because I actually did a post (below) about the day. Maybe there are two different National Pistachio Days, but that would be nuts.
