A no-grain breakfast – Breakfast at Cliqueany’s

This week, my nutritional kinesiologist took me off carbs. Just for a week … something about my body can’t digest them right now. Whatever, I’m hungry! Imagine, waking up, anxious to get some energy to start your day. You reach for your usual breakfast, only to remember that you can’t eat it! To top all that off, most of the dinner leftovers in the fridge are now off-limits, and your husband shuns the dinners you cook, asking where the real food is … it’s going to be a long week….

Seriously, the hardest part has been breakfast. My usual weekday breakfast is an Ezekiel sprouted English muffin with sunflower seed butter, ground flax seeds, unhulled sesame seeds and dried currants, washed down with a glass of cranberry water. No, really. It’s easy to prepare, super-healthy and tastes great. No, really.

I’ve been missing it, and it’s been tough coming up with different things to eat. One day, I had two poached eggs and a smoothie. The next, I made myself a microwave omelet (I know, I’m quite lazy) and some turkey bacon. It turned out pretty good, so here’s how I did it: Using a microwave-safe bowl, put in your fixin’s — I used shallots, broccoli, chunks of manchego cheese and fresh basil — pour two slightly beaten eggs over the goodies, and nuke for 2 minutes.

I’ve been looking for some other recipes, and I’ve sadly found about 7,092 for eggs (done that!) and not much else that sounds appealing. I’m going to try this recipe for flax pancakes, substituting the cream and cottage cheese with organic, whole milk yogurt. Here’s hoping….
