Redneck Rice: a canned feast – Redneck Cooking

I love spring for the most part, but when it comes to eating it sucks. The freezer is just about empty of good meat. All the vegetables at the store are hot house grown and nearly tasteless. It is still too early for good fishing and the Morels have not come out yet here in Idaho.

I asked Bo what he thought would be good for dinner; he said bacon. Well, at least I think that was what he said when he barked and drooled. Bo likes bacon even more than I do. Bacon sounded good so I checked the fridge. No bacon there. I did find a can of Spam with bacon. That is a good start to my masterpiece.

My normal recipe for rice is to cook a cup of brown rice. Add in a can of Nalley’s chili and done. This is a simple yet filling dinner. Not much to write about there so I thought some more. The great thing about rice is that you can add it to just about anything. My wife does not care for the brown rice, but I really like it better than the white. When I can, I try to use more of the brown rice. So what to do to make this more than just a can of chili mixed with rice? Here is what I came up with.

Redneck Rice

Ingredients:

  • 1 cup of brown rice
  • 1/2 of a large onion, diced
  • 1 26 oz jar of the salsa of your choice (I used Sam’s Choice medium large chunk)
  • 1 7-oz can of Spam with bacon
  • 1 14.5-oz can of Italian Diced Tomatoes with Basil, Garlic, and Oregano
  • Chili powder
  • 2 tablespoons of oil (vegetable, olive, canola, or a nice 30 weight will do)

To start I cook the rice. Now the secret to really pulling this dish off is the rice. I like to cook my brown rice in a pan on the stove. I start by bringing 2 1/2 cups of water to a boil. when the water is boiling I mix in a spoon full of the chili powder and then add 1 cup of brown rice. bring it to a boil and then reduce the heat, coverĀ  and simmer for 45 to 50 minutes.

Once the rice is done, set it aside. Dice up the onion and the Spam with Bacon. Heat the 2 tablespoons of oil in a large skillet. Add the onions and Spam. Sprinkle on more chili powder. Cook until the onions are done to your preference. Next add in the jar of salsa, and the can of diced Italian tomatoes. Bring the sauce to a boil. Stir in the rice and reduce the heat. Cover and let the mixture simmer for 10 to 15 minutes. Remove the pan from the heat and let stand for a few minutes. This will make enough for 4 people, or enough for Bo and I to have dinner and then lunch the next day. Add a big slice of my Peach upside down cake for dessert and enjoy!

Jeff I hope you don’t really give that to Bo, I know I hate onions but dogs really are not supposed to eat them!

Hi Cate. Thanks for the comment. No I don’t let Bo have the onions. He gets very upset with me when I will not share them with him because of the onions. I have to be careful when I get out onions to chop however. If I leave one on the counter and walk away for a second he will grab it and run off to eat it. He seems to like onion with his shoes for a light snack before dinner.

Heh, I know, dogs love anything they’re not supposed to have. One of ours once got into a box of fererro rochers that was left on our bed unattended. He actually managed to eat the chocolate and leave the wrapper without ripping it to shreds, very sneaky of him because it looked like someone ate it and forgot to pick up after themselves. If it hadn’t happened long before we had a chocoholic daughter, we would certainly have thought she was the culprit.

Our dog did the same thing once! He somehow took the lid off a box of chocolates, carefully selected the ones he wanted from the wrappers and left the others.

When I don’t remember to close my purse completely, my dog sneaks in and gets a piece of sugarless bubblegum. Little rascals!
