Recipes that I didn’t want to lose track of are what ended up in my column this week. I’m always on the lookout for new salads, and my intense longing for anything comfort food made me fall in love with the potato skins recipe. Pretty much any ethnic food’s okay in my book, and Indian is pretty simple to cook at home.
No magical themes, no gourmet vision-quests, just solidly delicious recipes that I’ll be making sometime soon.
I love a good salad. One that’s got fennel, red pepper, cabbage and Gorgonzola cheese somehow gets elevated to yum status. Emerald city salad‘s got all of those and mixed greens, wild rice and becomes a healthy one-dish meal.
Cheesy potato skins with sun dried tomatoes caught my eye because it’s an innovative twist on an old favorite. Since it’s easy and my kid loves all things potato, this may be a meal served at my house very soon.
I think I’m on an Indian food kick lately. I recently tried Heidi Swanson’s recipe for palak daal and now I’m drooling over this easy (and they mean easy) recipe for chicken masala. Which, now that I think of it, would have been a nice accompaniment to the palak daal. Chicken marinated in yogurt and roasted. Yep, I’m on it.
