Eight more healthy crock pot meals

I make no excuses for my obsession ... I love my crock pot and can't stop collecting healthy recipes. That's a good thing, right?

I can’t help it … finding healthy crock pot meals is a sickness, and I’ve got it bad! Since there’s no cure, I guess I’ll just have to give in to my disease and create another roundup post of healthy crock pot meals. You know the ones — no sodium-laden condensed soup or dry soup mixes, just whole foods.

OK, so I cheat a little with the whole foods one by listing this recipe for crock pot chicken with black beans and cream cheese, because it calls for a jar of salsa, which can be a little unhealthy. Buy organic, check the sodium content and make sure there’s no preservatives and it still counts! This recipe is super-easy, with only five ingredients, but seems like a real crowd pleaser.

Beer-braised anything is delicious so this beer-braised pork and black bean soup, slow-cooked with chipotle in adobo, cumin and onions has got to be good. They suggest serving it with salsa, sour cream (I’d use plain yogurt) and fresh cilantro … that sounds just about perfect to me.

Who doesn’t love a good tagine? One-dish meals make my world go ’round, and when they’ve got apricots and Moroccan spices like this chicken, chick pea and apricot tagine I get a little excited.

I love lentil soup, but I’ve never added barley to mine, and come to think of it, I’ve never made one in a crock pot either. Perhaps this Italian lentil and barley soup should be next on my list….

Could this crock pot recipe be good enough to serve to guests? I’m thinking chicken chasseur (with its two kinds of wild mushrooms) would be divine with garlic mashed potatoes and a mesclun salad.

Orange glazed chicken is so simple — orange juice and corn starch combine and slow-cook to make a delicious and sweet glaze. It’s like that Chinese orange chicken without the deep fried coating. Serve this one over rice noodles with some broccoli.

These might not necessarily be easy, but these stuffed cabbage leaves are healthy and sound amazing. Have you ever had stuffed cabbage with apples inside? The combination of ingredients is unique and really worth a try.

African sweet potato stew with red beans also has a unique blend of flavors: peanut butter, lime, cumin, ginger and more. I’m sure I’ll be trying this one over some brown rice, and I can imagine reheating it with a splash of coconut milk would be delicious.

What? You still need more healthy crock pot recipes?
