Potato veggie pancakes – Breakfast at Cliqueany’s

 

potato-pancakesBreakfast: give me a muffin and I’m good to go. It’s too bad I have that little voice inside me, telling me that my body really needs good nutrition to feel good. Yeah, and to look good; I’m vain enough to admit that it’s not all about the healthy cells on the inside.

So instead of hoarfing two or three chocolate chip muffins as my first meal of the day, I feel compelled to ingest vegetables, fruits and the like. It doesn’t have to be all business; in fact, it’s got to taste fantastic.

And frittatas taste fantastic. So do eggs over easy, omelets and fruit salad. But sometimes I just want something different for breakfast, especially on the weekends. This recipe for potato, zucchini and carrot pancakes has it all — even a cute little egg in a nest.

The reason I like this recipe is that it takes your simple hash browns and kicks up the nutrition — and flavor — by adding carrots and zucchini. It’s got fresh herbs, and everything’s tastier with fresh herbs. The spring greens served as a side are appealing. I’m not sure I’ll even feel like I’m eating a healthy breakfast with all the yummy-ness going on in this recipe.

Man, it makes me want to throw a brunch party, but getting my act together enough to entertain in the mornings is a daunting thought….
