Fried Chicken Redneck style – Redneck Cooking

Have I mentioned how much I love my wife? she is the greatest woman in the world. I often wonder just what form of brain damage she suffers from that makes her stay with me and not run screaming from the house. Aside from the fact she is absolutely gorgeous she is also the best cook in the world. The first time we met I was sure I was punching out of  my weight class, but figured I would see where things went. When she made me her fried chicken I thought I had died and gone to heaven. I proposed on the spot. I was not sure what the look on her face meant, but Lucky for me the brain damage kicked in and she said yes. That was 13 years ago. I still cannot believe that. It seems like only yesterday.

This is a very simple recipe and yet it is so tasty. When I found out the ingredients I could not believe it. It sure didn’t taste like it was made with Rice Krispies, but that is what the coating she uses on the chicken is made from. The next surprise was that the fried chicken is not fried. It is baked in the oven.  Only a great cook like my wife can fry chicken in the oven. I can burn stuff in the oven, but I have not figured out how to fry it.

Fried Chicken Redneck style

Ingredients:

  • 1 whole chicken, thawed and cut into pieces
  • 1 cube butter or margarine
  • Johnny’s Seasoning salt
  • 3 to 4 cups Rice Krispies

Place the Rice Krispies in a zip lock type bag. Use a rolling pin to crush the Rice Krispies. Sprinkle in some of the Johny’s Seasoning salt.

Melt the butter in a dish large enough to dip the chicken pieces in.

Pre heat the oven to 375 degrees. Grease the bottom of a baking dish.

Dip each piece of the chicken in the melted butter. toss the piece of chicken into the bag of crushed Rice Krispies and shake until the chicken is completely coated. Place the chicken in the baking dish. Repeat for all the pieces of chicken.

Sprinkle on more Johnny’s seasoning salt to taste and bake for one hour to one hour and twenty minutes.

Add some steak fries, or a green salad and dinner is served.

This is actually decently healthy too — it’s oven-fried, so not submerged in a vat of boiling oil, and if you use organic butter it’s a winner. Oh, and a really great gluten-free choice for all the breaded chickens out there.
