Crab-stuffed portobellas, coconut sweet potato pie, eggplant patties – Recipe Roundup

Each week, fabulous recipes grace Debbie’s in-box and pop up on her computer screen, and she’s sharing her favorites with you.

I admit, I’ve more than satisfied my sweet tooth with some of the past installments of Recipe Roundup. Last week’s white bean cookies and the week before’s 7000 or so dessert recipes, for instance. Aside from the one transgression (coconut sweet potato pie — who can resist?), we’ve got some delightful savory fare this week, from appetizers to soups to sides and main dishes.

Portobella mushrooms stuffed with crab and mozzarella — This is a pretty easy dish to prepare and makes an impressive appetizer. Bring a dish of them to a gathering, or plate each separately for an intimate dinner party. No one [with taste] will hate these.

Coconut sweet potato pie — I know, I know, it’s not savory, but it is wonderful! The crust is wheat-free and the only sweetener in the filling is honey or maple syrup. A truly healthy and decadent dessert.

Cool Jade Soup — Lima beans and green beans are pureed and enhanced with tons of fresh, green herbs: cilantro, parsley, scallions, dill mint… oh, and some cumin and cayenne. I want a bowl, pretty much now.

Eggplant Patties — I love veggie burgers that aren’t all isolated soy protein and fillers. This one fits the bill, and loving eggplant as I do, well, that’s just a bonus.

Curried rice salad — So, so easy, this recipe reminds me a bit of biryani rice, with the raisins and almonds, but the honey curry dressing is a bit different. Can you picture this as a side dish to some chicken dredged in ground coriander? Yum….
