Coconut shortbread, lemon torte and sesame almond cookies – Recipe Roundup

 

cantucciEach week, fabulous recipes grace my in-box and pop up on my computer screen, and I’m sharing my favorites with you.

This week, desserts caught my eye. Luscious, sinful desserts, healthy sinless snacks and summery delights… gluten-free and/or flourless.

Anything that is wheat-free catches my attention, and there were a few offerings this week. The nicest thing about these treats is that they are designed to be gluten-free; they are not some classic cookie or cake recipe that is bastardized into a reasonable facsimile that is gluten-free and subpar.

Mothering Magazine‘s new newsletters are great. There’s now a weekly food one that comes around, highlighting all of their recipes of the week, and it’s hard not to click on every one of them. The only flaw is that I was grandfathered in for the sign-up and I can’t figure out for the life of me how to show you all how to sign up on their website. Let’s face it, it could definitely be me.

Coconut almond shortbread sounds pretty tasty, doesn’t it? There’s no traditional sugar in this recipe, only honey or brown rice syrup (although I’m trying mine with organic raw agave) which is a big plus, and the only flour is rice flour, so the gluten-sensitive can go nuts. Literally, because there’s almond butter and coconut in this recipe.

If that’s not good enough for you, these sesame almond cookies are completely flourless. Sure, you’ve got to have a cup of arrowroot in the house (which I do!) and not mind grinding up some almonds (or just buy almond meal), but I can tell you I’ve never had anything that was less than delicious that has been created by Cathe Olson. I am, however, opposed to almond extract in any way, shape or form (yucko!), so I’d leave that out.

Finally, we’ve got a lemon-nut torte with summer berries from Epicurious. Again, meant to be gluten-free, there’s almost nothing you can do to lemon, almond and honey-laden berries to make them suck. And how summery is this recipe?
