Double broccoli quinoa, snazzy sandwiches, bread machine pita – Recipe Roundup

Each week, fabulous recipes grace Debbie’s in-box and pop up on her computer screen, and she’s sharing her favorites with you.

Even though I don’t need to pack Owen a lunch for school, we often go on all-day outings so I like to have more exciting and nutritious fare up my sleeve than just a peanut butter sandwich (or in Owen’s case, almond butter). I found some fabulous sandwich ideas this week, along with a pesto that I can’t wait to try and bread machine pita bread — who woulda thunk it?

Heidi Swanson has captured my attention once again (I’m wondering if she’s looking for a personal chef position? I might have a job for her….) with her double broccoli quinoa recipe. I’m anxious just to try a broccoli pesto, which I’ve never done, but I also want to try this recipe with roasted broccoli.

Yummy! We aren’t generally sandwich people, but during all of our summer outings, I’ve been falling back on almond butter and strawberry jelly sandwiches for Owen. Frankly, I think that’s a disgusting combination (how unAmerican of me) so I found some that suit my tastes much better:

  • Veggie peanut butter sandwich? Think Thai, with nut butter, sprouts, chili sauce and cilantro.
  • This cherry chicken salad sandwich would sound perfect if mayonnaise was actually an edible food, but substitute yogurt and you just might have something.
  • I thought I had something when I started sprinkling shredded coconut on Owen’s sandwiches, but how about this updated peanut butter sandwich, with shredded carrot, sunflower seeds, currants and honey — yum!

My bread machine gets a lot of use making our sprouted spelt pizza dough, but I think I may try my hand at making my own pita pockets in the bread machine. It sounds easy enough, and I haven’t found any pre-made sprouted spelt pitas. I’m game, and I’ll let you know how they turn out.
